I tried @LauraBeth ‘s grandmother‘s biscuit recipe! Those who know me, know that I am an absolute disaster in the kitchen so the fact that these turned out even remotely decent is a triumph! Actually, they were delicious and my DH inhaled 3 right out of the oven!
The thing I want to work on? Getting the dough more even so they are all the same size (height) and perfect like the one on the bottom left stack 🙂

Today's lunch and blog post was this vegan Red Curry Vegetable & Cauliflower Rice Soup with Crispy Hoisin-Sesame Tofu. Full of summer veggies & Cauliflower rice subbing in for regular rice, it is tasty on its own but even better with the flavorful Tofu 'croutons.' Link to recipe below. Paired here with this #ARC that I am about to start for a book tour review this coming Friday. 📚🍲😋
I‘m writing about 3 good cookbooks today on #WeekendCooking. HOMEGROWN is all about New England flavors; PACKED focuses on nutritious & cost-effective packed lunches. TEXAS SLOW COOKER puts Southwest flavors in your crock pot. More on my blog. http://www.bethfishreads.com/2018/01/weekend-cooking-3-good-cookbooks.html?m=1
Look for a #WeekendCooking post soon. I love the premise of this cookbook and can't wait to explore it to see if it delivers on its promise.
Turkey meatballs and lemon rice, courtesy of the Cook's Country kitchen. Nabbed this one at the library after @StephanieY talked about it, and I may just need to own a copy in the long run. // #nomnom #cookbooks #litsycooks #weekendcooking
First new book of the new year. Well, it's an old book. I've been avoiding paper books for far too long (too hard to read in bed without a clunky light), so figured I would start with a short one. Plus I love Yoshimoto!
I am a disaster in the kitchen! Meal prep often ends with a call to the fire department or a visit to the emergency room; but back in the day when I was giving it a good faith effort, I loved Roxanne Gold's menu cookbook. I would annotate my copy w/what went wrong, wine notes, etc. Pictured above, detail of the page from the year that the gravy exploded. Don't ask... #HappyThanksgiving #weekendcooking
