Finally a cool day and I feel, like cooking. This is a broccoli and tofu stir fry from one of my favourite vegan cook books.

Fall Harvest Butter is pretty tasty. Husband liking his toast as well, which is great. Another option for sneaking good food into his gut😂
It‘s not as thick as I‘d like, but I didn‘t want to turn the slow cooker to high with the propped open lid to let more moisture evaporate.
Lesson Learned: Start prepping this one earlier in the morning so I have options to keep cooking without staying up too late. Problems when you‘re over 50🤣
Excited to try this Fall Harvest Fruit Butter! I tried making a different vegan butter recipe and was not impressed with the too liquidy consistency, but Hester‘s slow cooker direction to prop the lid of the slow cooker open makes total sense for a more successful result. Only downside is that I‘m not a fan of peeling apples and pears, but if this stuff is yummy, I won‘t complain again about it.
#mtcookbook - I‘m trying an approach that worked this week- Soup is my favorite food- and i love Paprika and mushrooms but wanted hearty vs a pre meal soup- so I added potato, cabbage, onion, garlic, white beans and kale- It worked!!!! I‘m calling it my Hungarian-Irish Stew. And it was a win with my mom and son too!

A #Sultry vegan cookbook from my collection. The subtitle is: “200 Sultry and Savory Global Recipes.” I have the 2008 version tagged but I think the 2014 revised cover is more “sultry.” I tagged the retitled/revised version below.
My #mtcookbook goal is one new recipe a month to get back into the habit of cooking from scratch (ish) and make it fun again. This cookbook was on my Litsy TBR so I borrowed it from the library. I was excited to find this soup recipe because I‘ve actually been searching for red lentil options besides Dahl and not finding them. It came out pretty well, but I‘m not sure what tweaks I‘d want to make before adding it to my regular repertoire.👇🏼

Made the Cardamom & Pear French Toast Casserole😋 Really like how Hester spells out what to do the night before for prep. This morning I popped all the ingredients into my slow cooker and took the dogs for a walk. My husband pressed down the bread cubes into the liquid base at the one hour mark. I got home, served breakfast. So convenient. Plus vegan cooking is pretty easy clean up too!
