My Pantry: Homemade Ingredients That Make Simple Meals Your Own | Alice Waters, Fanny Singer
15 posts | 7 read | 6 to read
In this sweet, petite collection of essays and recipes, Alice Waters showcases the simple building-block ingredients she uses to create gratifying, impromptu meals all year long. In her most intimate and compelling cookbook yet, Alice invites readers to step not into the kitchen at Chez Panisse, but into her own, sharing how she shops, stores, and prepares the pantry staples and preserves that form the core of her daily meals. Ranging from essentials like homemade chicken stock, red wine vinegar, and tomato sauce to the unique artisanal provisions that embody Alices unadorned yet delightful cooking style, she shows how she injects even simple meals with nuanced flavor and seasonal touches year-round. From fresh cheeses to quick pickles to sweets and spirits, these often-used ingredients are, as she explains, the key to kitchen spontaneity when combined with simple grains, vegetables, and other staple items. With charming pen-and-ink illustrations by her daughter, Fanny and Alices warm, inviting tone, the latest book from our most influential proponent of simple, organic cooking ensures a gracious, healthy meal is always within reach.

It is entirely possible that I will umami myself to death.
Puréed the preserved lemons I made (from the Meyer lemons that grew on my tiny tree) to make preserved lemon paste.
Paired with Kerrygold Dubliners cheese on a pretzel cracker, it is divine.
Directions for preserved lemons from Alice Waters‘s My Pantry. #mtcookbook

Beatlefan129 That sounds absolutely delicious 🤤 8mo
Tamra Mmmmmm I am envious! 8mo

Aimeesue @Beatlefan129 It‘s fabulous! I love both lemons and salt, so it seemed like a no-brainer. I did have to wait several months for the lemons to ferment though, so it‘s not exactly quick 😂 8mo
Aimeesue @Tamra Holy cow, I have a whole quart, almost. If you lived nearby, I would sure offload so- i mean, GIVE some to you! 🤣 🍋 🍋 🍋 8mo
mabell Oh how cool!! I tried preserving lemons once, and it was a fail 🤣 8mo
batsy That looks absolutely delicious! 7mo
Aimeesue @mabell oh no! I‘ve tried doing slices before and they turned out OK but not great, but I went with quarters this time and threw them in the back of the fridge for 4 months. 😂 7mo
Aimeesue @batsy I cannot adequately describe how much I love the lemon paste. Words fail me. *SWOON* 7mo
mabell @Aimeesue I don‘t think the recipe I followed used the fridge! I‘ll have to try again! 7mo

My feminist book club chose Alice Waters‘ memoir last month & since I‘d already read it, I picked up this small collection of essays and recipes instead. It‘s a joy to read—better than her memoir—plus includes ink wash illustrations by her daughter Fanny Singer. Waters writes: “Sometimes the best dishes are the simplest.” That can apply to #cookbooks also. I‘m very pleased with the three things I made from this book.

HardcoverHearts I finally went to Chez Panisse cafe (her restaurant) last week, and I have lived in the Bay Area for a few decades. It was so divine. She is such a great chef. 6y
Lindy @HardcoverHearts I‘m envious. Glad to hear it was divine. 😊 6y

Three things from this book all turned out great: vin d‘orange; candied orange peel (made from the fruit strained out of the fortified wine); and panpepato (made using some of the candied orange peel). #cookbook

Freespirit Wow they look fantastic 6y
Lindy @Freespirit Thanks. 😊 6y
sarahbarnes You‘re quite talented! 6y

readordierachel The candied orange looks especially delicious! How sweet is the vin? 6y
Lindy @sarahbarnes Just good at following directions. 😊 6y
Lindy @readordierachel The wine is slightly sweet, counterbalanced by the bitterness of citrus peel. It‘s Pinot Grigio with a bit of 90 proof alcohol. A nice aperitif. 6y
Fridameetslucy Oh man. This looks amazing!! 6y
Lindy @Fridameetslucy Time on my hands and an audiobook in my ears. A couple told me recently that it took them two years to get through a Louise Penny audiobook, driving from Edmonton to Palm Springs and back twice. I said, “Ha! A 14-hr audiobook? I listen to 10 of those in a month!” 6y
Fridameetslucy @Lindy tee hee. Me too. Ithere should be an over 25 hour audio book club - I am a dickens fan so I routinely listen to 30 plus hour novels. 6y
Lindy @Fridameetslucy 🎧 😁👍 6y

I have two different Alice Waters cookbooks out from the library at the moment. They were published only 3 years apart, so I‘m surprised about the many changes in her recipe for candied citrus peel. I have never made this, so I don‘t know which instructions to follow: cook to 220F stage (The Art of Simple Food II) or to the thread stage—230-234F (tagged book). I‘m going to have to research this online. Littens, please jump in with advice. 🍊

“My pantry is always changing. I get exposed to flavours I‘ve never tasted before, and my pantry has to adjust.”

Lindy I‘m the same. Case in point: matcha. I had never experienced it in such delicious deep strength before my trip to Japan. The matcha ice cream in the photo was so rich it tasted almost like chocolate. 6y
Soubhiville Mmmmm! I want to try that! 6y
Lindy @Soubhiville It‘s unbelievably delicious. 6y
erzascarletbookgasm I LOVE matcha! Matcha ice cream, tea, latte, desserts....💚😍 6y

I‘m trying a new recipe: vin d‘orange. It‘s an aperitif made with white wine, oranges, grain spirit, sugar and vanilla. In a month, when it‘s ready, I will let you know how it is. 🍊🍹

britt_brooke Yum!! 6y
rockpools If you need any help sampling it... 6y

Lindy @RealLifeReading I hope it‘s along the lines of limoncello. I‘ve never tasted vin d‘orange before. 6y
saresmoore Yummy. 🤤 6y
Lindy @saresmoore 😊If it turns out, I will try another recipe in this book, one that uses cherry leaves to flavour wine. 6y
Tanisha_A That sounds and looks really appetising. 🤤 6y
Tanisha_A And using cherry leaves to flavour wine sounds just as flavourful 6y
LeahBergen That sounds delightful! 🍊 6y

Eating tree leaves seems like a whole new area of cuisine to me. I ate preserved cherry leaves in Japan (above) and now in Waters‘ book I‘ve encountered recipes for peach and fig leaves. 🍃

saresmoore I‘m intrigued! 6y
Lindy @saresmoore I‘ve only just now remembered that there was a whole chapter on fig leaves in 6y
Lindy @saresmoore Have you ever had peach leaf tea? The next time I‘m somewhere that peach trees grow, I must try it. 6y

saresmoore I haven‘t tried it, but I have a young blooming peach tree in my backyard. 6y

“…preserving these fruits is like taking a perfect snapshot of the summer moment.”

(I agree with Alice Waters. We have such short summers in Edmonton, and fruit preserves are a way of tasting sunshine during the winter months. Above, my highbush cranberry jelly.)

Tanisha_A Eeee, that looks so good 6y
Lindy @Tanisha_A Thanks. 😘 6y

Recipes. I‘ve gleaned a few bean recipes.
How about making your own vanilla extract?
I have for years. It‘s easy. How-to inside.

ErickaS_Flyleafunfurled Making your own vanilla extract? 😮 I never thought about that! Now Im curious! 7y
Dolly @ErickaS_Flyleafunfurled Couldn‘t be easier! You just need booze and vanilla beans. I use cheap vodka. I‘m sure directions are online. Go ahead, do it! 😃 7y

#AprilBookShowers Day 24 - #Shelfie

I'm very fortunate to be able to attend author events frequently, and to be able to purchase signed copies of books on occasion. This space on top of my bookshelf is dedicated to those autographed works.

#septphotochallenge day 18 (part 2)

Thanks to @Zelma for posting about Alice Waters for today's #somethingforsept - she is one of my foodie idols, and her cookbooks basically taught me how to cook. The last time I was in #SanFrancisco she was doing a signing of her new book at the Ferry Building and I was able to snag a copy...without embarrassing myself by passing out from excitement. #win #signedsunday

RealLifeReading I'm envious!! 8y
BooksForEmpathy Wow!! The restaurant is outstanding. Once in a lifetime experience! 8y
Zelma Woo hoo! Very nice! 8y
BooksForYears @BooksForEmpathy It certainly is! The one and only time I ate there it was like a religious experience 👼 8y
