The perspective on this photo is weird but I ate it all too quickly to take another one I'm afraid.
From this book we have creole cajun tempeh pieces, a beetroot and candied walnut salad, greens with orange juice and weird fact for you all in the us grits are nigh on impossible to get in the uk so I used polenta (please don't get upset) love this book! A fair amount of work needed for the recipes in comparison to others but worth it.

Since I used his recipes for my book-inspired dishes for "The Cooking Gene" I thought I should give Brian Terry's "Vegan Soul Kitchen" a big ??too. This cookbook gives African-American soul food cooking a healthier vegan spin while keeping it delicious. I have made several recipes from this book & these Grit Cakes with Caramelized Onion, Garlic & Thyme, paired with Spicy Smothered Cabbage were fabulous. Link to recipes below.

Not a recipe from this book, though inspired by it. Collard greens and turnips.

saresmoore Yum. I'm interested to see a vegan recipe for collards. I tend to lean on a braise finished with bone broth. What's your liquid infused with? 8y
Lindy @saresmoore @AustenJennings I like soy sauce and garlic with my greens. Haven't yet tried Terry's signature collards, which have orange juice and raisins, appealing as that sounds. 8y

AustenJennings @saresmoore I sauté the collard stems until brown (2 bunches worth). Add water ~3 qt. Add 4 cloves garlic minced. Add 1 28 oz can fire roasted tomatoes (puréed). Bring to boil and add greens. Cook 45 mins. Add 3lbs turnips cubed. Cook 15 more mins and then add 4tbs white miso paste (whisk with some broth before adding). just ate this. V good 8y

AustenJennings Oh, and collard stems are chopped. Most people discard these but I feel like it's such a waste. The have lots of flavor (and nutrients probably). 8y

Donna_sBookMinute But isn't there fiber in the stems? They don't bother me. When I clean my own, I strip them off. But if I'm cooking the pre-washed ones, into the pot they go. And, yeah, what @Lesliereads said. 8y

hgrimes The Vegan Soul guy is a local in my city (Oakland). 😀 I have a friend who has the vegan cupcake cookbook that she lives by and she makes the best cupcakes I've ever had. 8y

GlitteryOtters How do you like Isa Does It? I've found her cookbooks to be a real mixed bag...tons of recipes I adore for the most part, but then sometimes she will have recipes which are such complete duds that I want to smack her & her publisher for letting them out into the wild without adequate testing. I want to buy this, but my problems with quality control being spotty on her books published during the last several years makes me nervous to invest the $. 8y
GlitteryOtters (That said, I absolutely want to kiss her for her gem of a cookie cookbook. Saved my sanity and helped me save a lot of $$ when I catered my own vegan wedding 3.5 years ago.) 8y
Eyelit @PurpleyPumpkin I only just got the bake and destroy so have drooled over recipes but not tried. I have tried a few in Betty goes Vegan and have liked them. I purchased that one because I grew up with an old battered orange hardcover Betty Crocker cookbook in our household and learned to cook from that... so Betty Goes Vegan is nostalgia and progress for me 😄 8y

Eyelit @GlitteryOtters I've tried more recipes in Isa Does It than her other cookbooks. I've only had one not meet my standards (and I'm still convinced in that case I substituted something incorrectly - I've been known to 'make something' work if I don't have exactly what a recipe calls for. So, I really love Isa Does It. In fact I'm making a curry tonight as well as some chai spice snicker doodles from it 😁 maybe try it from your library first? 8y
GlitteryOtters @Eyelit thanks for the honest thoughts on it! I am glad to hear you liked it so much. Our local library does not understand much about the appetites of a college town & has very few vegetarian or vegan cookbooks, so I doubt they will get this in. Also, my card is currently lapsed as they only let you have it for a year, then you must provide insane amounts of proof you are a resident (apparently my property tax bill wasn't enough, they wanted... 8y
GlitteryOtters @Eyelit bank statements or something similarly extremely official. Last time they wanted to photocopy my bank statements, and I wasn't comfortable, so I am currently visiting the "library of Meg", AKA my own shelves for a bit. Not sure I feel comfortable giving random entry level clerks making under $10/hour my banking info, you know? And utility bills aren't in my name (3 adults live here, we split handling bills). State ID wasn't good enough. ? 8y

Ellsbeth @GlitteryOtters Wow. I renewed my library card yesterday in Oregon, and all they needed was my driver's license number. Also, every library I made use of is very happy to take book recommendations/purchase requests. I learned I should not wait for them to get what I want. I should just tell them! I discovered they actually really want you to tell them. Also, I am addicted to interlibrary loan. 😄 8y
Eyelit @GlitteryOtters that sounds excessively severe for a library! I'm sorry to hear that it's not a great viable resource for you. 😟 Isa has been around for a while, so I bet half price books or other used bookstores may have copies by now... again, sucks about your library! 8y
GlitteryOtters @Ellsbeth unfortunately, I live in a college town with a library system which is underfunded and angry at all the local students who use their services, but don't pay for their operating costs. Also, their staff have pretty terrible customer service skills and all act like every single person is trying to take advantage of them. Their rules as listed on their website are much easier than how they actually act when I go in. And their priority is... 8y
GlitteryOtters @Ellsbeth ...to buy a ton of popular best sellers and ignore their other sections, so their philosophy is also at odds with my reading/library use style. I grew up with great libraries in CA, and have sort of given up on this library after a decade of them treating me like a cheat & a liar. Also, they cut down on our ILL capabilities, which I miss.Maybe they'll improve at some point, but right now the borrowing privileges aren't worth the hassle. 8y
GlitteryOtters @Eyelit yeah, I figured I'd ask my fellow veg/vegan friends and plan my purchase after their feedback, but no one I know here has bought it yet! How strange! After February my book budget will be a little less strained, so I'll start watching for good deals then! And, yes, the library here is insane (or, at least, the staff I deal with have strict interpretations of rules and don't actually care about increasing their circulation). Their loss! 8y
Ellsbeth @GlitteryOtters That is very sad and I am sorry to hear that. I am also in a college town with a very underfunded local library. The state doesn't seem to like to support libraries & the city almost cut their budget by 50% last year until there was a major public outcry. At least my customer service experiences are good. Good luck and I hope it gets better. 8y

Yeah, I figure I'll focus on re-reading my own favorites &reading up a lot of my own unread books and e-books and check in with them again, see if they are worth dealing with (and if they are worth the $3 round trip bus fare and long transportation times to get access to free books...all branches are a few miles from my home, so it is a 2 hour round trip for me to spend 20 minutes at a library with few books I want & rude staff). 8y

My husband brought that (and about a dozen other) vegan cookbooks to the marriage--nice little bonus, especially since none of his cookbooks overlapped with mine, so our vegan and vegetarian (I was vegetarian from 1995 until about 4 years ago) cookbook collection is absolutely epic! 8y

#Day21 #booksandmusic I went for COOKbooks and music for today's #augustphotochallenge. These 4 books have playlists by recipe or menu & expanded my musical & culinary horizons. The Surreal Gourmets are old school 90s when I was in my 'new cook/hostess phase' & got me to fill my suggested '5-CD turntable' w/ Chet Baker & Tom Waits. Bryant Terry feeds my iPhone w/ all kinds of jazz, blues & soul songs, as well as my belly w/ great vegan food 🎼💜🍴

Lindy Love having Bryant Terry's music suggestions with recipes, even though I don't actually listen to them. It's nice in the same way non-food photos add atmosphere to cookbooks. 8y
DebinHawaii @CynCruz23 Probably closest to the latter 😀 I don't eat meat or poultry, I do eat a primarily plant-based diet with the addition of fish and eggs a couple of times a week. I limit my dairy to the occasional good cheese and ice cream. I am a bit all over the map! 8y
DebinHawaii @Lindy Yes, I don't listen to them all but I love seeing what they are and sampling them when I'm in the mood. It definitely adds atmosphere and makes it fun! 8y

DebinHawaii @CynCruz23 Yes! I find vegan food is often the most interesting and fun to cook and I have gone there completely a time or two, but find I do better health-wise if I vary it a bit. I have used the recipes in VSF for cooking demos & teaching classes too! 👍😀 8y
