Eat Your Vegetables
Eat Your Vegetables: Bold Recipes for the Single Cook | Joe Yonan
8 posts | 1 read | 2 to read
A collection of eclectic vegetarian and vegan recipes for singles as well as lone vegetarians in meat-eating households, from the beloved Washington Post editor and author of Serve Yourself. An increasing number of Americans are turning to plant-based diets, both for their health and the economic benefits. And for many, they are the only one in their household who has made the change--making it the perfect time for this book of vegetarian, flexitarian, and vegan recipes specifically sized for single portions. In addition to 80 delectable and satisfying recipes, Eat Your Vegetables features essays on moving beyond mock meat and the evolution of vegetarian restaurants, as well as economical tips for shopping for, storing, and reusing ingredients.

Are you a cookbook user, a connoisseur of Uber Eats, reliant on tried and true family recipes... or something else entirely?!

I‘m in the family recipe / going to bed cause it‘s too hard camp 🤔 I also like borrowing vegetarian cookbooks from the library and dreaming about having a personal chef...

DivineDiana I use both cookbooks and online recipes! Plant based eating, so I do love vegetables! Also dream of a personal chef! 👩🏼‍🍳 5y
Lindy I love borrowing cookbooks from the library and I use them as inspiration to get creative in the kitchen. When I‘m looking for a specific kind of recipe, I often search online and compare several similar before making my own interpretation. 5y
Amandajoy I love cookbooks! I like plant based but eat less of it since moving in with my husband who thinks we need meat with every meal. I don‘t really want a personal chef, I just want more time to cook more involved meals. 5y

thegirlwiththelibrarybag @DivineDiana, vegetables are the best! And yes, personal chef is an excellent daydream 😂 5y
thegirlwiththelibrarybag @Lindy, I had a housemate once who excelled at just throwing stuff together to great effect, no recipe needed. Great skill that I wish I had. 5y
thegirlwiththelibrarybag @Amandajoy, my stepdad was like that - one of the many reasons that I went vegetarian, aged 9. Hmmm, some sort of housekeeper then? To free you up to cook? ☺️ 5y
Amandajoy More like I need a way to make full time money working part time 😂 5y
thegirlwiththelibrarybag @Amandajoy, winning the lottery ☺️ 5y
CarolynM I have quite a lot of recipe books, some of which I use often. These days I'm just as likely to look for recipes on the Internet 5y

CaitZ Sounds right to me 😃 5y
julesG I was told chocolate is made from beans, so it's a vegetable. Same as coffee. So, a Soy Chocolate Latte is actually Three Beans Soup. 😜 5y
Lreads @julesG 😂😂👏 5y
jen_the_scribe I'm on board with this argument 😂 5y

Potatoes are a vegetable, right? Eating alone tonight. I went all the way to the other side of town to get a gluten-free bun!

No walk, okay eating, not my best fitness day, but my new fitness tracker comes from amazon tomorrow!! 👏🏻👏🏻🎉🎉

#bfc #bfcr2 #bookfitnesschallenge #goteam

cewilf Fitness trackers are so motivating!! Go get those steps tomorrow 💪💪💪 6y
Megabooks @cewilf I‘m super excited about it! I can‘t afford a FitBit right now, but this knockoff had good ratings! 6y
wanderinglynn Potatoes totally are veggies. 👍🏻 6y

KathyWheeler I track my fitness with my phone but I‘m thinking of getting a real tracker. Yay, new fitness motivator! (edited) 6y
JamieArc @Megabooks Which one did you get? After the last #BFC, I got the VeryFitPro version, which was only $25. I‘ve only had it a couple weeks, but it‘s great and I can‘t imagine why I would spend so much more for a FitBit! 6y
Megabooks @wanderinglynn 😁🥔🥰 6y
Megabooks @KathyWheeler I got the same one @JamieArc has for $29 on Amazon! 👍🏻👍🏻 it has an underwater rating, but I‘d double check reviews/ratings since you swim. https://www.amazon.com/gp/product/B07PFP9QJ4/ref=ppx_yo_dt_b_asin_title_o00_s00?... 6y
cobwebmoth Potatoes contain lots of vitamins, so they totally count as a vegetable.😘 6y
JamieArc @Megabooks @KathyWheeler The only thing I don‘t like about it is that it doesn‘t track swimming. Not sure if you can wear it in the pool, but there‘s no option to track laps. I figured if I actually did a good job using this one, I could upgrade to a more expensive tracker that does include swimming. 6y
KathyWheeler @JamieArc I‘ve never found a good way to track swimming. I just count my yards. I know I‘ve messed up doing that before though because it‘s easy to lose track. 6y
Megabooks @cobwebmoth 😁😁👍🏻🥰😘 6y
Megabooks @KathyWheeler @JamieArc I‘m not a swimmer, so this is okay for me. I mainly walk and do a little biking. Glad you knew it didn‘t have that, Jamie!! 6y
KathyWheeler @Megabooks I went looking for fitness trackers that include swimming and that are all expensive; the cheapest was $80.00. Apparently “waterproof” means you can wash your hands and take a shower but not swim. I might get this one you got anyway to better track my walking. 6y
Megabooks @KathyWheeler The one I purchased had great reviews on Amazon, and the company seems responsive to questions/customer service. The cheapest Fitbit is now $100, which I definitely cannot afford right now!! I will say, though, my friend got her 8-year-old daughter a $200 Fitbit Versa!! I just couldn‘t believe that. I‘m glad I‘m not a parent!! 6y
JamieArc @KathyWheeler I just count laps too, but often lose where I‘m at. @Megabooks Overall, I really like it and does what I want it to do (steps, calories burned while doing different activities, heart rate). Definitely a good motivator to do more steps! 6y
sudi I was thinking of getting one too, but the fitbit is out of my budget right now. So i'm looking at cheaper options with the mi band 3 by xiaomi 6y
Megabooks @sudi I looked at that as well, but ended up going with the Lintelek. I hope it works out!! 6y
sudi @Megabooks still better than spending over 80$ on a glorified pedometer. I just want a basic fitness tracker which tracks my steps and heart rate, i'm still searching for a cheaper option since the Lintelek one isn't available in India. 6y
Emilymdxn #goteam ! Looks like a fabulous dinner! Good luck with the fitness tracker arriving 6y
Megabooks @sudi Yeah, agreed! I can see if you have the extra money or only swim or other stuff like that, but I mainly walk, so I hope this is perfect for me. When it‘s cold, I bike at the gym, and I think it supports that, too. I really hope you can find one that works for you in India!! 👍🏻 6y
Megabooks @Emilymdxn Thanks! I enjoy those really thin hamburgers and, of course, a gluten-free bun!! Plus crinkle-cut fries! It was good. 😉😁😋 6y
BooknerdsLife Hahaaa yes! It‘s totally vegetables 😂😂👍🏼 And Yay! For your new fitness tracker 🙌🏼 6y
Megabooks @BooknerdsLife Woo hoo!! 😉😁🎉🎉 (edited) 6y
Purrfectpages Gluten free buns! The struggle is real! 6y
Megabooks @Purrfectpages So real!! And this one is actually good!! Celiac?? 6y

Check out this thing of mathematical and geometric beauty. This is a vegetable that kinda tastes like a combo of broccoli and cauliflower. But the more important part is how it shows the Fibonacci sequence and spiral. I felt so bad cutting it up.

DivaDiane Oh, I know! Aren‘t they gorgeous?!? 7y
TsundokuAleax @DivaDiane I was at the market like 😍😍😍 7y
ApoptyGina69 Romanesco! A favorite and hard to come by in myNorCal mountain town. Enjoy! 7y

I'm a woman of my word @MicheleinPhilly - daydrinking and vegetables

TrishB Great stuff 👍 8y
saresmoore I'm confused. Those fries are very green & leafy. 8y
LauraBeth @saresmoore they were on the husband's empty plate across from mine - I ate them 😀 8y

LauraBeth @TrishB I feel 100 times better 😀 8y
saresmoore Oh, good. Treat yo' self! 8y
LeahBergen Good job!! 👏🏻👏🏻 8y
LauraBeth @saresmoore and @LeahBergen I've been subsisting off a pack of vending machine crackers on a daily basis - not healthy or good 😔 8y
saresmoore Yeah, I should rephrase that: Take care of yo' self! I wish I was there to bring you good food. Still covering you in prayer, my sweet friend. 8y
Litlady 'Atta girl‼️ 🍺🍴🍟🍆 8y
LauraBeth @saresmoore thanks sweet friend! ?? Between my women's group and our married small group - they've started a "meal train" for us which will be a huge help! Gotta love church family who step in and take charge ? 8y
LauraBeth @Litlady ☺️☺️ 8y
saresmoore It's one of the best things about having a church family, I think. Whether grieving, caregiving, having a baby, or just generally breathing...you'll never go hungry! 8y
MicheleinPhilly You need some cheese on that salad. Dairy is important! 8y
LauraBeth @MicheleinPhilly this was an unhealthy Cobb salad with bacon and bleu cheese. But I'm going to pass it off as healthy for today! 8y
MicheleinPhilly PROTEIN! 💪🏼 8y
Cinfhen Where are those fries??? 8y
Cinfhen Oh now I see....good for you!!! 8y
LauraBeth @Cinfhen I got the fries in!! 8y
