The trusted companion of scores of home bakers is finally available in paperback! Originally Published ten years ago - and shortly thereafter honored as the James Beard Foundation's Cookbook of the Year (2003) - this cookbook is today every bit as relevant as it was then. And now the modern classic is in easy to use Flexibound Paperback, with its hundreds of easy and foolproof recipes, from yeast breads and sourdoughs to trendy flatbreads and crackers to family favorites such as pancakes and waffles. Leading you through the steps of leavening, mixing, proofing, and kneading through shaping and baking, the experts at King Arthur Flour also include their best fried doughs, quick breads, batter breads, biscuits, quiches, cobblers and crisps, cookies, cakes, brownies, pies, tarts, and pastries. For more than 200 years King Arthur Flour has been in the business of making the highest quality key ingredient in all of baking: flour. They've done decades of experimentation and research in their famous test kitchens on how the various ingredients in baked goods behave and why. The Baker's Companion, a kind of culmination of generations of loving work, brings you more than 350 recipes that teach you which ingredients work together as well as which don't and why. It is this knowledge that will allow you to unleash your own creativity and to experiment in the kitchen. You'll get a complete overview of ingredients in chapters on flours, sweeteners, leaveners, fats, and more. You'll find information on substitutions and variations, as well as troubleshooting advice from pros at King Arthur Four.

I tried the recipe on the back of the bag from King Arthur Baking Company‘s ‘cinnamon sweet bits‘: a cinnamon bread. It‘s yeasted and the recipe is written for a white bread, but I turned it into a wheat bread and of course, cut down on the sugar. The cinnamon bits are really good. Also, I love these silicone baking mats! I didn‘t know that they had the logo on them as well.

My KAF order came in! I‘m excited to try the 6 grain blend in the next round of bread I make. Husband picked out the cinnamon bits to try…I‘ll try the recipe on the back of the bag first. A word on the liners…silicone is a baker‘s best friend! These are a game changer. And the boiled cider…my friends, you simply can‘t live without it. It‘s worth the money! I can‘t wait to visit Vermont and go to the KAF store one day.

Churros Cake! It is moist, delicious, and smelled amazing in the oven. I tweaked the sugar in the main batter from 1 cup down to 1/2 cup.

About to make my first ever birthday cake from scratch for my husband! I‘ll post a picture later to tell you how it turns out. It should be a fancy white cake with raspberry filling :-)

LibrarianJen Yum! Can‘t wait to see the end result! I‘m good at making all kinds of cakes except chocolate. For some reason I always mess up chocolate cakes and it‘s super embarrassing. 6y
rachelm @LibrarianJen my husband is usually the baker in the household. He makes amazing creations ( one of the reasons why I married him 😝) but after being married for about 10 years I think I owe him a real cake LOL 6y
stacybmartin Baking is one of my very favorite hobbies (especially with an audiobook going) - can‘t wait to see a photo of the finished product! 6y
rretzler Oooh! We had a white cake with raspberry filling and buttercream frosting for our wedding cake many years ago. It was yummy. I‘m sure yours will be great! 😁 6y

Haven't done much reading today as I've been busy making bread. I made a honey-oat pain de mie (https://www.kingarthurflour.com/recipes/honey-oat-pain-de-mie-recipe) and a pain aux noix (https://www.kingarthurflour.com/recipes/pain-aux-noix-recipe). I did listen to an audiobook while kneading the walnuts into this bread dough.

Tamra Yum! 7y

I love this cookbook. Great, easy recipes for baking all sorts of things, like my favorite sugar cookies.

TricksyTails I've been searching for the perfect sugar cookie recipe! These look delicious! 😋 7y
callielafleur @TricksyTails They're so fast to make, too. My only complaint is that they use buttermilk, which I never have on hand. But otherwise the recipe is pretty standard. I also recommend the Cookie Companion! 7y
TricksyTails Thank you! I'll have to look for these. 🍪♥️ 7y

umbrellagirl You can sub regular milk and a dash of lemon juice for the buttermilk, assuming you have those in your pantry, which you mightn‘t. 7y
Tamra @callielafleur just add a little vinegar to milk = sub for buttermilk. 🥛 7y
Tamra @umbrellagirl 😆jinx! 7y
Suet624 Maybe you‘d like to come to Vermont and visit their headquarters? It‘s pretty sweet. 7y
callielafleur @umbrellagirl @Tamra The cookbook actually did mention the lemon juice! I didn't see it beforehand and bought buttermilk. I'll have to try vinegar! Thanks for the suggestions 😁😁 7y
callielafleur @Suet624 I'm in NH, so I'm most of the way there! I've always wanted to go. 7y
Suet624 👍👍👍 7y
umbrellagirl @Suet624 I need to get there! I love Vermont and CT isn‘t so far. (edited) 7y
Suet624 @umbrellagirl you‘re right! It‘s not that far and a fun place to visit. 7y

The King of cookbooks. #royals #readjanuary

BooksForYears My preferred brand of flour, but I've never tried out their recipes! 8y
Libby1 Which country is this from? I've never seen it before! 8y
GlitteryOtters They have the BEST flour, I literally have 100 pounds of it (bread, whole wheat & all purpose) in my house right now (we use a lot & as I usually bus commute to/from the grocery store, I stocked up before the winter weather started for the season. Hauling a couple of 5# bags plus other groceries over snow piles and across icy sidewalks is no fun!) 8y

outis @Libby1 - USA. The flours are easier to find in the northeast, east & midwest, but they're also available in the south & west with a little bit of looking. 8y
britt_brooke We always buy this flour! 👏🏻👏🏻👏🏻 8y
mcipher My brother has been there a couple times and says it's awesome! He brought me bach sourdough starter, which I may have killed at this point. 😳 8y

Pickpick

I'm slowly starting to learn that the hallmark of a good cookbook is the lack of a lot of glossy color pictures. This is a wonderfully text-dense baking cookbook and I've been having delightful results with the recipes. Follow the instructions and you'll be well satisfied.
