Ethiopia: Recipes and traditions from the horn of Africa | Yohanis Gebreyesus

The national borders contain one of the most fertile swathes of land on the continent. All this makes for a food culture as fascinatingly distinct as it is startlingly delicious. Chef Yohanis takes the reader on a journey through all the essential dishes of his native country, along the way telling wondrous stories. There are recipes for Doro Wat, chicken slowly stewed with berbere spice; Yeassa Alichia, curried fish stew; and Siga Tibs, flashfried beef cubes. The cuisine also boasts a wealth of vegetarian dishes. Among these are Gomen, minced collard greens with ginger and garlic; Azifa, green lentil salad; and Key Shir, marinated beet and potato salad. Then the book explains the intricacies and variations of Injera, the foundational sourdough flatbread made from the teff grain (which is gluten free and more nutritious than wheat). Complete with photography of the country's stunning landscapes and vibrant artisans, this volume demonstrates why Ethiopian food should be considered as one of the world's greatest, most singular and most enchanting cuisines.

Just before we are leaving #Ethiopia and moving to #Israel I thought I‘d recommend this Israeli Tv series that combines a little bit of both. Nevsu (means soul in Amharic) is an Israeli sitcom about a mixed family of Ethiopian Jews and Ashkenazi Jews, as they navigate through prejudices and clash of cultures. The series won the international Emmy, it is partly in Hebrew and partly in Amharic but there are subtitles too :) enjoy! #foodandlit

Jari-chan Mashed Avocado, Mango yogurt and mashed mango layered. Had to improvise a little on the original recipe, but it totally works like this 😊 4y

Jari-chan @Buechersuechtling I would have mashed them myself, but the problem with our stores are that they only sell huge pieces of mango. No way I can eat those before it goes bad. So I bought it. But I mashed the avocado - that's always fun 😄 4y
Buechersuechtling @Jari-chan I love avocado 🥑 but take it as a seldom treat. (Energy balance, sustainability. 🤐) It‘s the same here with mangoes. Here, they sell mango mash, I just recall it. There‘s apple in it also. 4y

Misir Wot, my first recipe from #Ethiopia - so many new impressions! 🤩
I decided to only use vegetarian recipes for this round, since the time before Easter is fasting time. Also, I only used my right hand to eat, using the dried Injera as a spoon 😁

Usually, I don't say, I 'read' cookbooks, because I look at the pictures and decide, what to make. It's different with this one, though. Not only are pictures amazing and help me picturing #Ethiopia, but there's a lot of information and insights into the dishes and the country to be found. This is not a simple cookbook, it's more. It has so much heart and love inside ❤️

Here is another popular Ethiopian spice blend, Mitmita. It is spicer than Berbere and used as a dip or seasoning to taste at the table. It has a citrusy bright fragrance with a hint of cardamom that is worth every sneeze! Both blends are excellent for grilling, but use sparingly until you are familiar with the heat level.

There are some simple recipes in this book that do not require specific spice blends. #foodandlit #ethiopia

Wooooooot!!! It worked! Fresh homemade injera - 100% teff.

I was most worried about the technique, because it takes a bit of practice. The first couple were off, but it doesn‘t take long to get the hang of it. But, the 7 day ferment from the tagged book was too long for my taste. I‘m going to try a 24 hour and 3 day for comparison.

Tamra Daughter had no complaints and ate it for snack with cheese. 😆 4y

Tamra @SamAnne here is a link to a 24 hour ferment. There are also lighter versions of injera that use a blend of teff and barley flour that are more often served in restaurants. I‘ve only been meaning to do this for 13 years now - since my son came home from Ethiopia. I love dark injera (100% teff), but we‘ve always purchased it from shops because it‘s been more convenient. But not THAT convenient because the shops are an hour away so I really should learn to make it so that we can eat Ethiopian whenever we wish. 😋 Wish me luck, it‘s a 7 day ferment and the griddle execution requires practice. 🤞🏾🤞🏾

mcipher I just went down such a rabbit hole with this post! I‘ve never had Ethiopian food but I‘m planning to try making slightly non-authentic injera and doro wat this week because both sound delicious! 4y

Tamra @mcipher yay! You can sub a flat bread or rice, but it isn‘t quite the same delicious experience. I recommend purchasing both Berbere and the spiced butter if you have access to Ethiopian shops. Otherwise you can purchase Berbere online and is excellent to also use for grilling veggies and chicken. 4y
Texreader I found an “easy” recipe for it on Pinterest (and posted it there), but when it said I needed sourdough starter I knew that it wasn‘t going to happen. Good luck!! @Butterfinger 4y

The tagged book is pricey and very hard to find- and although I try to limit my use of Amazon the kindle price and used price for other book were just very affordable. #ethiopia #foodandlit i love Ethiopian food- and while the closest restaurant is over an hour away I may just have to go. @Catsandbooks the coffee book is in my wishlist but I will def be buying Ethiopian coffee.

This is a beautiful book with lovely food and cultural photos. It also has accessible recipes! There are vegetarian options too - but check it out of the library first.

While there are recipes to make the essential spice mixtures and butter, I recommend purchasing at a shop or online.
