I usually don‘t “read”cookbooks but ,do I have travel plans ? No! Do I feel safe dining out ?No !This beautiful book explains that Roman cooking is so delicious because of the wonderful ingredients made /grown by the artisans & farmers along the old trade routes to/from Rome . Beautiful photos & great stories throughout. This cookbook does feature snout to tail cooking, some people want to skip those pages! Though I admire little goes to waste.
