Baking with Sourdough | Sara Pitzer

As mentioned in our latest episode, here is the sourdough loaf I just baked! Looks good but it was hard as a rock after an hour. Probably something to do with proofing at altitude. Let me know if you have any tips or tricks.

thebacklistbook Increase the sugar used to proof. Or adjust your baking time and temperature. The lower the temp typically keeps a loaf softer. Failing that switch to using bread machine yeast and a mixer revolving with dough hook on lowest speed for 20 minutes instead of kneading. And doing the rise in a warmed environment can help too. 3w

There‘s been plenty of preserving and a decent amount of baking in my home recently, but I haven‘t been making any new cookbook recipes. So, today I‘m sharing this year‘s final batch of candied jalapeños, a few jars of tomato sauce, and these cinnamon rolls even if they are online recipes. Since the sourdough cinnamon rolls are from the Clever Carrot blog, I‘m tagging Emilie Raffa‘s cookbook.

I tried the recipe on the back of the bag from King Arthur Baking Company‘s ‘cinnamon sweet bits‘: a cinnamon bread. It‘s yeasted and the recipe is written for a white bread, but I turned it into a wheat bread and of course, cut down on the sugar. The cinnamon bits are really good. Also, I love these silicone baking mats! I didn‘t know that they had the logo on them as well.

My KAF order came in! I‘m excited to try the 6 grain blend in the next round of bread I make. Husband picked out the cinnamon bits to try…I‘ll try the recipe on the back of the bag first. A word on the liners…silicone is a baker‘s best friend! These are a game changer. And the boiled cider…my friends, you simply can‘t live without it. It‘s worth the money! I can‘t wait to visit Vermont and go to the KAF store one day.

FAIL! I tried Beard‘s sourdough starter & bread recipe. While the loaf is otherwise perfect, the subtle flavor was off putting. You could taste the sour milk. I was totally suspicious about using milk for the starter and letting it sit for a week at room temp - with no feeds either. 🫢 #Mtcookbook

Going to try again with Emilie Raffa‘s recipe. That had good flavor, but not enough rise. I‘m going to cheat and add yeast when I bake the bread.

What‘s new? I learned to make sourdough bread with my friend and daughter last weekend, so we have had very yummy two loaves in the house. Now I am nervously feeding starter hoping to keep it alive! 🤣
