Bakeland
Bakeland: Nordic Treats Inspired by Nature | Marit Hovland
8 posts | 1 read | 4 to read
A quirky, beautifully photographed collection of delicious and creative Nordic baking recipes inspired by nature. From the Danish concept of hygge (or coziness) to the Swedish fika (or coffee break), when it comes to enjoying the good things in life, the Nordic countries tend to know best. And dessert, Bakeland reveals, is no exception. Written by Marit Hovland, the Norse graphic designer, baker, and photographer behind the popular Instagram account and blog Borrow My Eyes, this gorgeous recipe book is a remarkably innovative homage to the beauty of the world around us that will delight lovers of baking, crafting, nature, and all things Scandinavian. With fifty tempting dessert recipes and 140 stunning color photographs, Bakeland is as much a treat for the eyes as it is for the taste buds. Focusing on purity, season, and quality, Hovland offers a sweet, playful approach to the New Nordic cuisine trend made popular by chefs like Magnus Nilsson. Her belief that inspiration can be found everywhere shines through in each of her culinary creations, which replicate the most striking aspects of the natural world. From chocolate sea to pinecone-shaped gingersnaps, Bakeland takes readers on an artful, tasty trip through nature in Norway, season by season. Better yet, each recipe is detailed, precise, and easy to follow, with no special equipment required. With step-by-step illustrated instructions and an emphasis on simplicity, Hovlands approach to baking is as accessible as it is delectable.

36 book covers are hard to fit on a little Litsy square. I read 35 in July and bailed on two: Rosa Candida (I had been working my way through it since February but gave it up for good in July) and 1947: Where Now Begins (that one I will probably return to when I‘m in a different mood). My 5-star reads are obscured by hearts.

tournevis Native Trees of Canafa will take you at most ten minutes to read, so you could easily fill that square. 6y
Lindy @tournevis Yes, I read it three times, trying to understand what the fuss was about. This image is of all of the books that I read in July, plus one DNF. 6y
tournevis @Lindy It's good art. And clever, I found. 6y
tournevis @Lindy I get it. 6y
Lindy @tournevis I missed the clever part. I can see it as an art exercise, but I was mystified as to why the works were collected into a book. 6y
tournevis @Lindy She answering back to the kind of tree identification books that were very common in until the 1970s, most often published by provincial and the federal goverments. It's a reimagining if them with the emotional response included. I had one for trees, and I still have my animal tracts identification book somewhere. 6y

I didn't cut a stencil for the daisies, and made them in a mini-muffin pan and used a stainless straw to cut the holes. I also sliced them in half and added more lemon cream - cause you can never have too much lemon cream - right?

Simone62 New addition to the Public library collection. I think it I going to be very popular. 6y
Lindy You are correct about there not being such a thing as too much lemon cream. Those little cakes look scrumptious. (edited) 6y

Graphic designer Hovland is responsible for the layout, photography & original recipes in her stunning baking book. No specialty equipment is necessary; use aluminum foil to make moulds, for example. Don‘t have pearl sugar? Use crushed sugar cubes. The recipes aren‘t hard to follow, but most have many steps, often rather fiddly and time-consuming. I tried a few (scroll under title to see) & they turned out really well. Love this!

Lindy The #cookbook I‘m most reminded of is by another graphic designer, Erin Gleason: 6y
Lindy Hovland is on Instagram & has a blog (in Norwegian, not updated since 2017): http://borrowmyeyes.com/author/marit-hovland/ 6y

I love the photography and layout in this cookbook. Above left illustrates numbered steps to create the Chocolate Almond Cookie Eggs. The speckles are made by flicking a toothbrush dipped in a mix of vanilla extract & cocoa powder. Gift presentation: in an egg carton. Aren‘t they gorgeous? I want to try this recipe sometime.

Sesame-Ginger Buns with Lemon Icing from the tagged book. I didn‘t make the yellow flower decorations, and I used black sesame seeds, so they look different. (They taste great.) There aren‘t a whole lot of instructions for making these, but I didn‘t have problems because I already know how to make cinnamon buns.

DreesReads Well I requested the book from the library, but it‘s already out. I might not get it for 3 weeks! 6y
Cinfhen Thanks so much for sharing 💕💕💕 6y
Lindy @AudreyMorris I linked to the author‘s instructions for candied forgetmenots Above; it‘s the same thing for borage. 6y

This cookbook inspired me to candy some flowers from my garden to use for decorating cakes: borage, rose petals & cranesbill geraniums.

minkyb Oh my very lovely! 6y
Cinfhen That is UH.MAY.ZING 💕💕💕 6y
Lindy @minkyb Now I just need an occasion for cake, and on a day with cooler temperatures so I won‘t mind having the oven on. 😊 6y

DreesReads Oh my goodness I will have to try this with borage I have so much! But not when it‘s 93 inside. Next week maybe lol. 6y
minkyb I want a photo when you make the cake! 6y
Lindy @minkyb Okay. 😁 6y
Lindy @AudreyMorris The flowers will dry quickly if it‘s hot; this isn‘t a recipe that needs an oven. Unless you are baking a cake that you want to decorate with the flowers. 6y

batsy So pretty! 6y
Lindy @batsy @LeahBergen I enjoy interacting with you on Litsy, but sometimes I wish you were in my city so I could bake you each a cake. 😘 6y

ReadingEnvy Wow! You know, birch syrup was everywhere in Alaska. Is it a flavor in the cookies? 6y
Lindy @ReadingEnvy Nope, but I have a full bottle of birch syrup in my fridge, a gift from my nephew who spent 2 months tapping birch in the Yukon this spring. I love the stuff. 6y
LeahBergen Wow! They look incredible 😮 6y
