Our Christmas Eve feast... most of the items here came from vegan cookbooks. From the cookbook listed above we have gingerbread cookies, sugar cookies and Linzer Cookies. From the Make Ahead Vegan cookbook (tagged in comments) we have cauliflower chickpea pizza bites. From Isa's Vegan Cookies Invade Your Cookie Jar we have chocolate chip & tahini lime with black sesame seeds. Baguette slices from my fave bread machine cookbook....

GlitteryOtters I used the basic white bread recipe from this book, veganized it & set my bread machine to the dough cycle. I made 3 baguettes with the dough & cooked them in my own oven after giving them a water wash to bring out that nice brown color. 🥖

GlitteryOtters For the chickpea cauliflower pizza bites, I made a few alterations...I used VeganEgg as my egg replacer because it gives it a better flavor than other options, I added a teaspoon of Frontier's Pizza Seasoning spice, used extra bread crumbs (because I use homemade bread crumbs & they tend to be less dense than store bought) and cooked them as full sized muffins (not mini muffins) and increased the cook time to about 65 minutes.

GlitteryOtters @Suzze actually, if you wanted there would be plenty of cookies for you! My poor husband worked a full shift today, came home & loaded up on cheese & bread, ate a couple of cookies and passed out, so I still have around 150 cookies leftover 😂😂. We were originally supposed to go to a family Xmas get together tonight, but it turns out it's not happening this year (we were told otherwise, so I had planned accordingly with lots of treats) 8y

Verdict is: this is a pretty decent #vegan cookie cookbook. I made the Linzer, Gingerbread & sugar cookie recipes & they all turned out delicious. Can't wait until Christmas Eve so we can eat them up! ✨🍪🎄🍪✨

GlitteryOtters @Karen_V if you are looking for a good vegan Cookies cookbook, my absolute favorite one is by Isa Chandra Moskowitz (tagged below). I made about one and a half dozen different cookies from this cookbook for my wedding reception (the theme was afternoon tea). They all were amazing!

GlitteryOtters @DebinHawaii I'm eyeballing the Gingerbread people, sugar cookie & Linzer cookie recipes. Not sure where I'm going to start, but I have ingredients for all of them! I figure that they should be able to do the basic, standard cookies well, and if they don't pass the "basics" test, I won't try out the more unusual ones, like the mocha white chocolate pecan cookies. 8y

GlitteryOtters @DebinHawaii @Suzze ok, I have determined I will make the sugar cookies, Gingerbread people & Linzer cookies. I'll make the dough for all 3 today & follow their instructions to refrigerate the dough until Wednesday for them, that way I can roll them out & make them Wednesday & won't have to freeze them so we can eat them at Christmas. If I make them Wednesday, they should be good until the day after Christmas. 👍👍 8y
