I had my tacos tonight! I made the basic flour tortillas from DOS CAMINOS TACOS, then built off the cookbook's zucchini, black bean, and corn recipe by adding a bunch of tofu crumbled with the taco seasoning from Budget Bytes. A little cilantro lime crema and fresh cilantro finished things off. They were the best tacos I've made in ages, and I'm never buying tortillas again. Freshly-made ones are twenty times better.
