Avatar: The Last Airbender: Legacy of The Fire Nation | 
pickIt doesn't add a ton of extra lore to the Avatar world, but I adore Iroh beyond words and this is like a balm for the soul. It's written as a journal from Iroh to Zuko.
It does have new illustrations (w new moments between everyone), letters, and even a Jasmine Dragon menu.
